Banana & spinach muffins

A tasty snack for kids. Makes 40 mini muffins.

Ingredients

¾ cup milk

½ cup extra virgin olive oil

½ cup honey

120g baby spinach (fresh or frozen)

1 large ripe banana

1 large egg

1 teaspoon vanilla extra

2 cups flour

1 ½ teaspoons cinnamon

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

Instructions

1. Preheat oven to 175 degrees Celsius, and spray your muffin tin with cooking spray.

2.      To a blender add, milk, spinach, banana, honey, egg, vanilla, and oil. Blend until completely pureed.

3.      Combine all dry ingredients.

4.      Pour the spinach mixture into the dry ingredient bowl. Fold the spinach mixture and dry ingredients together gently until just combined. (Do not over-mix.)

5.      Scoop the batter into the muffin tin, and bake for 20 minutes, or until the muffins are golden brown.

6.      Remove from the oven and cool on a cooling rack. If you use silicone muffin cups, remove from the cups and place on cooling rack to prevent sweating.
